Cinnamon & Cashew Butter Slices

A quick and easy recipe for your bank holiday weekend! With this current hot weather we do not want to be spending ages in the kitchen. I made these delicious slices this morning, only taking minutes to prepare, then in the oven for 30 minutes. Very quick, very easy and very scrumptious! You can then enjoy the rest of your bank holiday weekend and take these little slices out with you for when you need a little on the go snack!

Ingredients

  1. 5 ripe bananas
  2. 300g oat flour (or mill whole oats into flour)
  3. 4 tbsp cashew butter
  4. 6g ground cinnamon
  5. 80ml any milk/non-dairy milk
  6. ½ tsp baking powder
  7. 20g cacao nibs (optional)

 

 

 

 

 

 

 

 

 

 

 

Method

  1. Pre-heat the oven at 180ºc (fan assisted)
  2. Mash the bananas in a mixing bowl until you have a runny consistency
  3. Add the rest of the ingredients to the mixing bowl and mix altogether until fully combined
  4. The cocao nibs are optional – you can leave this out or add anything else you want – whole cashew nuts would work really well. If you like it quite sweet you could also add approx ½ cup of maple syrup to the mix to make it sweeter, though I find the banana makes it sweet enough for me
  5. Line with parchment paper or use some coconut oil to slightly grease a deep square cake tin (or you can use a loaf tin if you would rather have fewer, larger slices)
  6. Transfer the mix into the tin ensuring you spread the mix evenly and smooth the top with the back of a spoon
  7. Place in the oven for approx 30 minutes or until the top turns golden brown
  8. Once baked, leave out until it has cooled down then slice into 12 squares
